  2. In moderately heated pan add oil, add ginger + 1 green chilli and sauté for few seconds then add carrot + beetroot + green chilli and sauté for 3-4 minutes.
  3. Then add capsicum + salt and sauté for 3-4 minutes.
  4. Now add mashed potatoes and all spices, mix well and sauté for 4-5 minutes till veggies leaves pan.
  5. Mixture for cutlet is ready. Allow to cool and discard the green chilies.
  6. Make shape of cutlets, give any shape of your choice.
  7. Make a medium slurry of maida + water + little salt, dip each cutlet in slurry and then coat with bread crumbs.
  8. Heat oil (medium heat) drop each cutlet and shallow fry both sides till golden brown and crisp.
  9. Cutlets are ready to serve. Sprinkle rock salt and enjoy.
  10. Serve with salad and pair with tea / coffee.
