- 1 medium Beetroot
- 1/2 tsp Cumin seeds
- 1/2 tsp Turmeric powder
- 1 tsp Red chilli powder
- 2.5 tsp Pav Bhaji Masala
- 1 lemon
- as per required Chopped Coriander leaves
- as required Butter
Steps to make to make Jhatpat Pav Bhaji
- Chop vegetables
- Assemble ingredients
- In a moderately heated pan, add butter, add cumin seeds and allow to crackle, then add chopped onion and sauté till translucent.
- Now add ginger garlic paste and sauté till rawness goes off. Then add all veggies except tomato, capsicum, and cabbage.
Sauté for 4-5 minutes by adding salt. - Now add capsicum + cabbage and sauté for 3-4 minutes.
- Now add tomatoes, mix well and sauté for 3-4 minutes
- Now add all spices and mix well, stir fry for 4-5 minutes till spices release oil. During this stage, mash veggies as much as possible. I prefer chunky, so mashed lightly.

- Now add mashed potato and mix well. Add warm water and stir well.
- Now add warm water as per requirement (preferred gravy consistency) and cook/simmer for 3-4 minutes. Add chopped coriander and mix well.
- Lastly, add lemon juice + butter, mix well and bhaji is ready.
- Toast pav in sufficient butter by adding pav bhaji masala, toast nicely and serve with bhaji along with finely chopped onion and lemon pieces.
