- 1 cup Semolina
- 1 cup Vermicelli
- 1 cup curd mix with 1cup water
- 1/2 cup grated carrot
- 1/4 cup beetroot juice
- to taste Salt
- 1/4 tsp eno's fruit salt
- For tempering-
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 chopped green chilli
- 1/4 tsp grated ginger
- 8-10 curry leaves
Instructions to make to make Vermicelli Rava Idli
- Dry roast the semolina/ rava, vermicelli separately until light brown & allow them to cool.
- Mix together semolina, vermicelli, curd,grated carrot & beetroot juice.
- Heat oil in a small pan,add mustard seeds,chopped green chillies,grated ginger,curry leaves & saute until curry leaves become crisp.
- Pour the tempering to the semolina- vermicelli mixture, mix well & keep the batter aside for 30 mints.
- Finally add salt,eno's fruit salt to the batter,mix well & pour batter to each idli mould & steam the idlis for 15 mints on medium heat.
- Serve it hot with coconut chutney.
